Shrimp Shooters for Game Day!

Game day is just around the corner and whether you’re hosting a few or a bunch, this recipe is sure to bring a win!
These Shrimp Shooters are simple and you can prep these hours before the game.
Do you have some left over Lobster from Lobster season? Swap out the shrimp and throw in the Lobster.

Lemon Basil Shrimp

Toss 2 lbs. of raw shelled & deveined 16-20 sized shrimp with a stick of melted butter,
juice and zest of 1/2 lemon, and a dozen or so basil leaves finely chopped.
Place shrimp with combined ingredients on a roasted pan and roast at 400º
degrees until the shrimp are pink. Allow the shrimp to cool and place in fridge.


Gazpacho

6 ripe tomatoes, peeled and chopped
1 purple onion, finely chopped
1 cucumber, peeled, seeded, chopped
1 sweet red bell pepper (or green) seeded and chopped
2 stalks celery, chopped
1-2 Tbsp chopped fresh parsley
2 Tbsp chopped fresh chives
1 clove garlic, minced
1/4 cup red wine vinegar
1/4 cup olive oil
2 Tbsp freshly squeezed lemon juice
2 teaspoons sugar
Salt and fresh ground pepper to taste
6 or more drops of Tabasco sauce to taste
1 teaspoon Worcestershire sauce
4 cups tomato juice

Combine all ingredients. Blend slightly, to desired consistency.
Cover tightly and refrigerate overnight, allowing flavors to blend.

Chill your shot glasses prior to your event. Place your shots glasses on a serving tray.
Fill up each shot glass with the Gazpacho, place your shrimp in the shot glass, with the tail on the outside
and add a slice lime and thin slice of cucumber for show and you’re all set!
